I got a 97 z71 with the 5.7, and ive recently noticed an issue that has been driving me crazy. Almost everytime i take off pretty quick, the truck like spits and sputters and the oil pressure guage like goes crazy. i was told to change the coolant temp sensor, i did and its still doing it. I dont know what else i should look at or test.
the only exterior motor mod is a spectre cold air intake.
PLEASE SOMEBODY HELP ME

the oil pressure is directly related to the engine RPM. if its spitting and sputtering, its jumping up and down in RPM's, so the oil pressure will jump up and down also.
for example, idling, you should have just over 30 psi. you rev it up and it should climb to over 50 psi. if you gun it and it spits, its just LOST RPM, for a second, so the pressure just dropped to almost nothing
and when it stops and start running right, it goes back up to normal range....
check your fuel filter and replace it first off... next would be your fuel pressure. and try running it with the stock intake assembly back on it. if it doesn't do it stock, something in your setup is wrong. I have heard of the MAF sensor being clocked in the intake wrong feeding bad info to the ECU. providing yours has a MAF sensor..
