There is quite a bit of LSx swap info posted over here that pertains the the older trucks such as your '64.

8.1 if it isn't a DD. Would make one hell of a toy.
You'll want a complete donor, wiring harness to putor, even the manifolds and Y pipe to make life easier.

This ^^^
And keep in mind not all of the sensors and such are strictly "emissions" items; they're required for a fuel-injected engine to run correctly.
You could ditch the catalytic converters but would end up with trouble codes from the rear O2 sensors; that could be eliminated but it would require a custom tune to the computer.
You'll also need either an electronic speedometer or an electric-to-cable converter box to operate your original speedometer.
Retain the factory accessory drive setup for the engine you choose. With the 8.1 it should fit fine as people have big-blocked many 60-66 trucks. The LSx swap will likely require custom brackets or frame notching to clear the A/C compressor.
My vote is 8.1, naturally, because it's a big block. What's not to love. :D

i believe i would be doing away with the a/c for sure.. def not a daily driver more of a drive whenever i feel like it/ ideal weather kind or driver...
i really think this would be awesome.. would i be splicing the harness into my old harness?

doesn't your factory "harness" have like 7 wires? lol, i'd personally get a custom harness for the conversion...

lol exactly, not very big harness at all.. now if i could find a good custon harness or something like the painless harness i would prolly dish out the $ to do it right
