Battery on my 1990 GMC Sierra (350 tbi) is dead. So, i hook up the jumper cables to try and start it and my remote start keeps trying to start it, before it has enough charge to actually start. When I unhook the jumper cables it doesnt try and start. Why is it doing this? How do I unhook the remote start? I don't care if I don't have it, I just need my truck to start! Job offer in the morning i NEED to get to!

Autostarts are generally required to have a switch that disables them for maintenance.
Some have a switch under the dash, others near the in cab fuse block, sometimes it's just a doorjamb switch that interrupts when you raise the hood. I'd try to find that.
