thoughts on removing/gutting cats on a 97 suburban?

I am considering doing this, I want to find a shop that can do the tuning to keep the lights off and what else is needed after removing them. I do however have a o2 sensor that does not read, it seems damaged and does not throw a code. My thought is to put it in, double check that its not throwing a code( my truck is now throwing codes 420 and 430) and doing that cat first, thoughts on this, what effect will it have on mileage, performance, and all around driveability?

I cut my cats off to find they were both bad. The one year old magnaflo was completely hollowed out, and the stocker was broken inside. I replace them with new pipe and it runs good.
