I'm going to build a 383 stroker motor, and what type of performance am I going to get out of it with vortec heads 64cc. It will have dished piston (it's a kit) with crank, And stock 5.7 I beams.
And a 750 Holley carb. Anything else I should need to know?

Yes. Is it a roller cam-ready block? Does it come with a camshaft?

I have a hydraulic flat tappet cam. Lunati 262/268 and. A big 305 cam from comp it is also hydraulic flat tappet. I want to be able to be driven on the street w/o it dieing and have good performance.

That Lunati would make for a good mild setup, but you could step up to a 270-274 range without losing driveability. That 262 will probably be good for around 350hp but you'll have a ton of low end torque. A bigger cam will cause low end to suffer a little but you'll gain a lot more up top.
