Based on 15.5 sec for my bone stock '98 C1500 XCab, I'd say 16.3 sec considering the extra weight and inertia of the 4wd truck.

Cool, I'm hoping that the modifications I've done will get me in the low or mid 15s. High 14s being VERY optimistic. Might order a 50 shot dry kit if I'm not satisfied but then again, I don’t want to blow the engine. Is it safe to run a 50 shot on the Vortec 350?

Short answer: Yes, it's safe.
Long answer: If it's a dry shot like I do (just spraying it in front of the MAF sensor), then definitely monitor the O2's with some type of scanner the first time you do it, just to make sure yours is responding and adding fuel like it should.
In fact, even with a wet kit, I'd want to watch the O2's to make sure the fuel supply was keeping up.
