Rear "Oh Sh*t!" bars

So I completely dismantled the cab of my truck, and getting ready to draw up plans for an interior. I want to get rid of the "oh sh*t" bars that are in the back for the rear passengers to grab on to. After I do that, I want to get rid of that dip where they go and make it even as if they were never there. Any ideas where to start with this? Not sure how to take those off, but I know the headliner would have to be removed and reinstalled.
