I daily drove a 1999 C8500 GMC for a year, I don't really remember there being ANY difference from the early OBS interiors other than the big steering wheel and the doghouse. We also had a 92 C3500, so I spent a lot of time in both.

The steering column angle for them seems a little different. Not sure if it would have an effect, but it could probably be compensated for.
If room allows, I'd also use the big sucker of a steering wheel. Might be a tight squeeze as I've got a 2" riser under the seat.

I drove a 2000 model Penske truck that still ran the early style OBS dash. I remember the gauge cluster being different and maybe some switches and stuff, but the shapes of the actual dash were all the same.
Here's a dash that I bought from a guy on C-list claiming it was one for my OBS and in fact it was one for a Topkick/Kodiak. I ended up getting stuck with it because the guy ended up being a dick about! It's brand new, but has a few bite marks from where a mouse got to it when it was stored in a shed. The bottom portion of the dash where the steering column goes is where the difference is, you have extra places for switches and what not.
The maroon center section of the dash isn't included.
I own a kodiak dumper. I'll post a pic on monday or tuesday.

As far as I know, they are almost identical, but there's a few subtle differences, like a strip across the top of the cluster (part of the dash piece I assume?) as well as a larger area under the bottom of the cluster, but above the fuse panel door. I'll try to find the google pictures I had, there was only 1 or two so I'm glad you guys are pulling through with more.
