I've got a 1997 K1500 with the 5.7L in it and it has (well, had) two cats on it and a single pipe from each one running to a dual in/single out muffler. I know that the newer 4.8L and 5.3L engines have a single pipe running into the muffler, but I do not know how many cats they have. I think they still have two cats and simply Y'ed the pipes into the muffler. I'm not an expert by any means (so someone call me out if I'm wrong) but even if the 5.7L and the 4.8L,5.3L engines have the same number of cats you can't use those headers on your 5.7 because of the engine size.

you cant use the 4.8/5.3 headers because the 5.7 has square port heads and the LS motors have round port heads, and the bolts will not line up, nor will the headers be run correctly to clear the frame

you need pacesetter quiktrip longtube headers, same ones i had on my tahoe, model 70-2260, or if ur gonna keep the original emissions crap like egr, they make one for that but i dont know the number. check out www.pacesetterexhaust.com

EDIT: http://www.summitracing.com/parts/PSM-70-2262 <thats with EGR for stock setup
