Would seats (buckets with a jump seat in the middle) from a 2007 truck fit in a '92 OBS?

You'd have to make brackets.

and if you want heat or memory to work youll have to get smart cuz thats all controlled by the body control module on the 07

yes it could fit, my truck doesnt have the memory and only power seats on the driver and I have the 40/20/40 split bench w/ leather. just have to make brackets

What set of 07 seats are we talking about?
I'm going to be attempting this very soon with a set from a 07 new style truck. I have a set from an 01 sierra but I just don't like the idea of them since there was way to much effort in them.
The newer seat track apppear to be more of any easier match to the floorpan but I'm sure I'll really find out in a couple of weeks.
