Okay guys I need your help.
Does anyone know how to take out the dash of the '01 Silverado?
Not the dash bezel but the whole dash.

Any help is greatly appreciated.

It's just all held in by clips and bolts. If you slowly pry away at each piece it just basically all comes apart. Usually you can tell if it's just a clip or an actual bolt holding you back by how much pressure you put on it. Just take your time to be sure not to break any clips. I don't know about the passenger side airbag or steering wheel.

Where should I start prying it off at?

You shouldn't have to pry anything. The bezzel comes off easy, and pretty much everything else unscrews or is held in with clips. The top of the dash pad is the only thing you should have to give a good pull to, and it pulls straight out. No need to remove the steeringwheel. disconect the battery before removing the passenger airbag, and it's held in by a few bolts(4 if I rember right).

The whole dash, steering column and all, or just the plastic carrier?

The plastic carrier requires pulling the bezel, all bottom dash pieces, and top dash cover. It's all 7mm screws and clips.
You also have to pull the passenger side airbag, all switches, radio, climate control, etc. Then there are a few 7mm screws on top holding the bracing on, and a few 10mm (I think) screws on the sides. I think you have to pull the steering wheel and shifter to get the plastic carrier off of the metal dash frame.
If you want to take the entire dash frame off, you'll need to disconnect the steering column (or maybe unbolt it and let it drop. Then there are several larger bolts near the pedal/column area and 4 large bolts on either side of the dash.

It's been several months since I pulled my dash, so I apologize for the lack of details.
