Is it possible to get a new better looking, like more retro looking dash to put in my '90 C1500 or what, I'm new to this deal....so just thought I would ask :).

You can dye/paint your dashboard. You can install one from another year of truck will require lots of fabbing and most likely fiberglassing or covering. Or you can make a complete custom one from scratch. Possibilities are endless. There used to be a sticky in the interior forums that shows a lot of custom interiors. Try and get some ideas there.
