Does anyone know if anyone has taken out their cats and ran straight pipes/ H-pipe/ and to dual mufflers. If so how is this set up? Whats the pro's and con's in doing this set up on a new body style 2000 Silverado. I'm not too knowledgable on exhaust systems, so any info would be appreciated. ALOHA!!!

There is really no reason to remove your cats... They flow great and do nothing to hurt exhaust flow with a stock small block... There is really nothing to gain by removing them. Leave them and the O2 sensors alone and you won't screw up your computer.
If you are just looking for more noise cut off the stock muffler and split the exhaust into duals "behind" the "Y" pipe... No muffler. Run full 2 1/4" tail pipes out the back and enjoy the "tunes"... Any muffler shop can do this for around 200 bucks. Use aluminized tubing and it will last a long time.
